loaf.microbakery’s sourdough loaves are made over three days
We start with the 12 hour leaven, before mixing and shaping, this is followed by the slow overnight process which enriches the dough’s sour character, to finally freshly baking the loaves the following morning. This unique process contributes to the loaf’s digestibility and wonderful sour character.
We use a blend of organic and regenerative flours from sustainable farms in and around the county.

We only use local organic freshly milled flours.
Our Sourdough
Heritage
A blend of four organic flours: rye, stoneground wholeweat, white and spelt.
Seeded Rye
100% rye flour, toasted pumpkin and sunflower seeds, barley, millet, oak flakes organic molasses.
Stoneground White
Original or tin.
Chia & Flaxseeds
Four flour blend with golden flax for goodness and bite, plus fibre rich chia seeds.
Seeded Crust
Stoneground white with toasted pumpkin and sunflower seeds, barley, millet and oat flakes.
Focaccia Rosemary and Seasalt
With lashings of olive oil, fresh rosemary and Maldon sea salt.
Stoneground white and spelt baguettes
Sweeter Treats
Cinnamon Bun with maple and coconut sugar glaze.

We are extremely fortunate to be working with a local independent roaster who have taken the time to understand our vision and taste ideals, helping us deliver a wonderful single origin, medium roast.

We support and use Pump Street chocolate who make small batch chocolate from beans imported from family farms and cooperatives around the world. Made ganache style with dark chocolate pastilles and sweetened agave.

We are a plant based kitchen and therefore do not use any dairy products.
